Bear Pond Espresso opened in Shimokitazawa in 2009, founded by Katsu Tanaka after nearly two decades pulling espresso in New York City. Where most of Tokyo's third-wave scene leaned filter and Nordic-light from the start, Bear Pond went hard the other direction: espresso first, ceremonial, and intentionally pre-Instagram in its aesthetic.

The flagship feature is the "Angel Stain" — a signature shot pulled with a specific technique Tanaka developed, and famously limited to a handful per day, served only before 12pm. Beyond that, the menu runs a tight cappuccino, a flat white, and a small selection of milk drinks; pour-over is available but not the focus. Bean sourcing is private and rotates with Tanaka's relationships.

The space is small and deliberately old-school. There's a no-photography policy at the counter, no laptops in the service area, and a focus on the drink itself that feels closer to a wine bar than to a third-wave café.

A short walk from Shimokitazawa Station, and a near-mandatory stop for anyone interested in how Tokyo's specialty scene took its non-Nordic path.
