Bugan Coffee Lab grew out of a Bergamo coffee family whose roots reach back to 2000, and it carries that pedigree into one of Milan's most ambitious specialty spaces. The team describes it as Italy's first coffee laboratory — a place where roasting, brewing, education and research share the same room. The sourcing is purist: 100% arabica single origins from responsible plantations, roasted with deliberately light profiles to pull out the fruit and florals that darker Italian tradition tends to bury. You'll find them on espresso and across filter methods, with detailed bean cards and staff happy to explain the why behind each cup. The Navigli-area space is bright and lab-like, as much about learning as drinking. Beans are available to take home and to order online with shipping. For anyone who wants to understand where Italian coffee is heading, this is the classroom.
