Café Velvet opened in 2014 as the creation of Ilse Geynkens, a Belgian lawyer who fell for Colombian coffee while working in the country, and began roasting its own beans in nearby Itagüí the following year. It sits on Vía Primavera, a few doors from Pergamino, and the two have anchored El Poblado's specialty scene side by side ever since.

The coffee programme is genuinely serious: single origins on espresso and V60, including limited natural Geisha lots that aficionados seek out. What sets Velvet apart is the pairing — some of the best cakes, pastries, and brunch in the city, served in an elegant, relaxed room that fills up on weekends.

It's the spot for a slower visit, when you want a dialled-in pour-over and a proper slice of cake. Come for the Geisha, stay for the carrot cake.
