Pergamino is where Medellín's specialty story begins. In 2012, the Echavarría family — coffee growers who had spent decades exporting their best beans abroad — opened a café on Vía Primavera with a mission to teach their own city to taste what it grows. More than a decade on, it's the name every guide leads with.

The coffee is genuinely farm-to-cup: beans come from the family's own farms in the hills of Antioquia and from partner producers they pay above market to support. The signature Lomaverde appears on espresso, Chemex, AeroPress, French press, and siphon, alongside rotating single origins and a popular cold brew. Regular open cuppings turn the bar into a classroom.

The Provenza flagship is bright, busy, and plant-filled, drawing locals, baristas, and visitors in equal measure. Come for the cup that started it all — and stay for the cupping if you can catch one.
