Cafetoria is the project that arguably introduced Finland to lighter roasting. Opened in 2002, the roastery predates most of the country's current specialty operations and helped define the template Kaffa and Good Life would build on later.

The roasting itself happens at the original site in Lohja, about 45 kilometres west of Helsinki. The Helsinki flagship — in a 1925 Art Deco building on Runeberginkatu in Töölö — is where most visitors meet the brand. At any time, expect three lighter-roast filter options plus one batch brew of the day, with a careful espresso programme on the bar and bags of beans on the retail shelf.

The Töölö space leans bright and architectural — the Art Deco bones do half the work — and it sits comfortably between residential foot traffic and the museum belt nearby. A few minutes from the Sibelius Park, in the heart of one of Helsinki's most walkable districts, Cafetoria is the kind of place where you can see how Finnish specialty has matured over two decades.
