If Warsaw's specialty scene has a ground zero, this is it. Filtry opened in 2007 — by most accounts the city's first proper specialty coffee shop — in a quiet, almost unsuspecting residential stretch of the Filtry district it takes its name from.

Nearly two decades on, it still does what made it matter: a thoughtfully rotated line-up of guest roasters, brewed with care on pour-over and AeroPress, with the day's offerings chalked up and ready to talk through. It manages the rare trick of being both a serious specialty destination and a genuine neighbourhood café — the kind of place where a regular with a giant dog sits next to a parent playing chess with their kid.

The roots run deep here: former owner Konrad Konstantynowicz went on to co-found the Czarna Fala roastery. Come for the history, stay because the coffee is still quietly excellent. A pilgrimage worth making.
