Fortitude Coffee

Fortitude Coffee opened on York Place in 2014, founded by Matt and Helen Carroll, and quickly became one of those Edinburgh rooms that people describe as their happy place. It started life as a multi-roaster cafe — pouring other people's beans and doing it well — before the couple took the natural next step and began roasting their own on a Diedrich IR-12. Today the operation spans three sites: the original New Town flagship, a Stockbridge cafe, and a bakery on Newington Road.

The roasting programme is restless in the best way. Fortitude constantly rotates its offerings, and it's not unusual to see beans from a few different continents on the menu at once, each chosen for what it brings to the cup right now rather than to fill a fixed line-up. For the truly curious, the 125 subscription is the headline act — a way to taste small, sample-sized portions of rare and unusual coffees that would otherwise be too expensive to commit to by the bag, each one arriving with a detailed profile of its origin and roast.

The cafes themselves are cosy and welcoming, all warm wood and easy conversation, and the care extends beyond the bar — Fortitude supplies coffee to spots around the city, including Cheapshot, the tiny police-box cafe run by University of Edinburgh students. Detail-obsessed but never cold, it's a roaster that rewards going back again and again to see what's new.
