Modern Standard Coffee

Modern Standard Coffee makes its philosophy plain — it's painted right on the wall of the Bruntsfield cafe: 'great coffee for everyone.' It's a deceptively simple line that captures the whole approach. The team takes specialty coffee seriously, roasting it on a proper stack of Diedrich roasters — a 70kg, a 25kg, a 12kg and a 2.5kg — at a site around twenty miles north of the city, but the goal is always to make the result welcoming rather than rarefied.

The cafe on Barclay Place, on the edge of Bruntsfield, is where that comes together. It's a clean, bright, blue-accented room with friendly staff, well-made flat whites and a tempting pastry case, and prices that don't punish you for ordering well. The coffee earns its keep — a 4.9 rating from regulars is no accident — but the atmosphere is unfussy and easy, the kind of neighbourhood spot you'd happily make part of your routine.

It's a fitting expression of where Edinburgh's coffee scene has got to: serious roasting infrastructure behind the scenes, an accessible and genuinely warm room out front. For specialty coffee that doesn't take itself too seriously while still getting every detail right, Modern Standard is a model of the type.
