SlowMov, a name embodying "Slow" and "Movement," champions a deliberate, appreciative approach to coffee, a refreshing contrast to hurried consumption. Pioneers in Barcelona's specialty coffee scene, founders François Justet and Carmen Callizo boldly forgo sugar in their café, inviting patrons to discover the inherent sweetness and nuanced flavors of their meticulously sourced beans. Their commitment extends beyond the cup, fostering a vibrant local food community through "La Colmena SlowMov," a weekly cooperative connecting consumers directly with local producers. This dedication to sustainability is further evident in their cargo bike deliveries and fully biodegradable coffee bags.

Driven by a passion for exceptional coffee, François and Carmen regularly journey to origin countries, cultivating direct relationships for fresh, seasonal, and traceable coffees. This hands-on approach allows for truly unique offerings, like an "intrinsic cherry processed" Catuaí from Panama with a 16-hour anaerobic fermentation, or a Colombian coffee from Luz Helena Salazar, distinguished by a 30-hour dry aerobic fermentation. Recently upgrading their roasting operation to a Probat UG22, SlowMov's philosophy is to let the coffee's origin speak for itself, crafting roasts that highlight the terroir's inherent qualities.
