Marrakech's Specialty Coffee: A Roastery Scene Hiding in the Industrial Zone

Marrakech's specialty coffee scene is young, and it is roaster-led. The city's traditional coffee is sweet, sand-brewed Moroccan coffee, drunk alongside mint tea and pastry. The third-wave movement arrived alongside that tradition rather than replacing it, and over roughly the last decade it has found its own footing. What you find now is a clear craft streak: roasters who work with traceable origins, brewers who measure carefully, and cafés that welcome questions about what is in the cup. The roots run through Sidi Ghanem, the city's industrial district. HESPERIS Coffee Factory roasts small batches with a tailored profile for each origin and runs a barista academy alongside its café. Nearby, FIASOM is a sibling-run micro-roastery where Ali holds Q-Grader certification. Near the Route de Safi, HeiBai Specialty Coffee pours filter-led coffee from guest roasters, including Intro Coffee in Tangier and Manhattan Coffee Roasters in the Netherlands. Close to Tennis Royal, MARH Coffee Roasters roasts in-house and pours V60 and AeroPress from a tight single-origin menu. Bloom Coffee, in the Al Massar industrial zone, roasts lots from Rwanda, Nicaragua and Ethiopia. Ask about the beans in Marrakech and you get a real conversation. Several roasters sell whole bags to take home, and Ethiopian lots show up on more than one menu, which makes the city a good place to compare origins side by side. Start in the roasting district, where the production is, then walk to Guéliz for the cafés. Plan a full morning for the roasteries, since several keep shorter hours and close on Sundays. The sand-brewed coffee of the Medina will still be there when you finish.
