Coffee Roaster
HESPERIS Coffee Factory
★ 4.9
In-house roastery with full-traceability single origins, brewed as pour-over, Chemex and espresso.
HESPERIS Coffee Factory was founded in 2022 by Karim Ramzi, a Marrakech native who spent years in Paris on fashion and portrait work before turning his love of coffee into a business. The roastery sits in Sidi Ghanem's industrial district, and the coffee house and academy operate under the same brand.
The roasting is small-batch and deliberately unhurried. Each origin gets its own roast profile, the coffee is rapidly cooled and rested for a few days to degas, and every batch is cupped before it goes out. Most of the lineup is single origin from high-altitude farms, with origins including Ethiopia, Colombia, Guatemala, Brazil and Papua New Guinea. The company says it works on full traceability and fair pay for farmers, and it roasts the Koutoubia and Royal blends for espresso.
Ask for a pour-over, a Chemex or an AeroPress, or try the Arabic Coffee Blend, infused with saffron, cardamom and cloves. The academy runs courses from beginner to professional level, led by trainers certified by the Specialty Coffee Association.
It is worth the trip out of the Medina for a bag of beans or a course. The roastery is closed on Sundays, so plan your visit for the rest of the week.
