Coffee Roaster

FIASOM

★ 5

Sibling-run micro-roastery in Sidi Ghanem focused on African speciality coffee and responsible sourcing.

FIASOM started with siblings who grew up in Marrakech in a family of coffee lovers, and the brand keeps that personal streak. The shop is shop 7 at 525 Rue Sidi Ghanem, in the city's industrial district. The idea is simple: African coffee, produced in Africa. The company describes its goal as responsible and sustainable production and sales, from raw material to waste, with support for farmers and seasonal workers and a preference for ethical producers. It is also exploring products made from coffee waste. Ali holds Q-Grader certification, and reviewers mention the knowledge at the counter. The manager talks through history, science and taste, and the coffee comes in several varieties at prices reviewers describe as reasonable for the quality. The shop is cosy, with recycled jute products on display alongside the coffee. Opening hours are short and split across the day, and the shop is closed on Sundays, so check before you go.
