Birkin is one of Buenos Aires's most ethics-forward specialty cafés. Located on República Árabe Siria in Palermo, the room takes the sourcing question more seriously than most: the menu is built around direct relationships with coffee producers around the world, and the team works actively with fair-trade-certified suppliers and farms — a brand identity built on what's behind the cup as much as what's in it.

For BA, that's a real differentiator. The city's specialty scene tends to be roaster-led — pioneer roasters set the tone, and most cafes pour those roasters' beans. Birkin's identity is different. The producer relationship is the lead; the bar exists to serve coffees the team can defend right back to the farm.

The café itself is a small, focused Palermo room. Espresso, pour-over, and the standard third-wave menu of milk-based drinks — all served with the calm consistency that comes from a clear point of view about what the room is for. Pastries complement, lunch options round it out.

If you've worked your way through Palermo's pioneer roasters (LAB, Full City) and want something with a different angle, Birkin is the natural next stop. The room is small. The work is honest.
