Café Registrado is unusual in the BA specialty landscape: it's three things at once. A roastery, a café, and an SCA-certified barista school — all running out of the same operation, which makes it one of the most institutionally serious specialty rooms in the city.
The school is the differentiator. Most specialty cafés in BA were founded by baristas. Café Registrado built the room you go to in order to become one. Their Specialty Coffee Association certification means they're qualified to train baristas to international standards, and a meaningful share of the city's specialty staff have trained here at some point.
The café side is what you'd expect from an operation built by educators. Beans come from carefully selected farms, get roasted in-house in the same building as the training room, and pour through a programme that includes single-origin espressos, creative cold brews, and the whole pour-over canon. The baristas on the bar are by definition SCA-certified — the room won't let them work otherwise.
If you're a specialty enthusiast looking to learn rather than just drink, this is the stop. If you're a regular coffee lover, expect a clean, focused café experience with more rigour than aesthetic — the room prioritises craft over Instagram. The kind of operation that quietly raises the level of the whole city's coffee scene.
