Blanca Studio

Blanca Studio is what happens when a specialty café decides it doesn't want to be anything but a specialty café. The Chacarita studio is the manual-brewing extension of parent brand Blanca de Coco Café, and the whole programme is built around one thing: pour-over, done right, with nothing else allowed to distract you.

You ring a bell to enter. There's no laptop policy, deliberately — Blanca Studio is not a coworking room and doesn't pretend to be. Inside, the interior runs petiribi wood in warm tones, the bar is tight, and the menu stays focused on filter brewing. The room is small. The point is to slow down, watch the brew, and drink it.

This is the kind of specialty bar that exists in Tokyo, Melbourne and a handful of other serious specialty cities — and almost nowhere else. Buenos Aires has it, on Av. Álvarez Thomas, on weekdays from 9 to 7:30. Show up. Order a pour-over. Sit with the cup. The whole experience is designed for that ritual and that ritual only.

If you want to understand the strictest end of what Buenos Aires specialty looks like in 2025, Blanca Studio is the room. It's the closest the city comes to a pure brew lab — and a useful contrast to the wider, food-friendly cafés of Palermo and Belgrano.
