Bombay Island Coffee Roasters has been roasting since 2018, and it does so in plain sight: the Vikhroli flagship sets a café and a working roastery under one roof, with a Probat 150 where customers can watch green beans turn golden. It's the kind of transparency that defines a serious specialty roaster.

Co-founder Rupal Jain is an SCA-certified roaster, and the house style is built on 100% arabica from the estates of Chikmagalur, roasted fresh and brewed across a wall of methods — espresso, pour-over, cold brew and batch. The result is potent, honest coffee that has become a daily ritual for the surrounding neighbourhood and a wholesale supplier to kitchens across the city.

The Godrej One setting is more polished campus than backstreet hideaway, but the coffee credentials are real. Stop in, watch a roast, and take a bag of something fresh home.
