Grey Soul treats a cup of coffee as something to be understood, not just enjoyed. Tucked into Pali Village in Bandra West, the roastery-café is built around a custom brew bar designed for manual methods — V60, Chemex and AeroPress take the headline, not the footnote.

The beans are single-origin and almost entirely Indian: arabica from Chikmagalur, Coorg, Yercaud, the Araku Valley and even Nagaland, roasted light to medium to let each origin speak. Menus read like study guides, with roast profiles, processing methods and tasting notes printed alongside each coffee, and the baristas are happy to geek out for as long as you'll let them. Beans go home by the bag, and there are classes for those who want to brew better at their own counter.

The space is calm, minimal and built for slowing down. It's a regular on Mumbai's best-pour-over lists for good reason. Come with curiosity and an empty schedule.
