Brew Lab opened in February 2023 on Redmond's Hill, just off Camden Street, and immediately positioned itself as Dublin's most precision-minded brew bar. Founders Ciaran and Jane built it on years of competition experience — and the room reflects that ethos. The cafe is almost split in two: one half a classic espresso bar treating every shot like a study, the other half a dedicated filter brew bar for V60 and Chemex pours from a weekly-rotating roaster lineup.
The sourcing strategy is distinctive — 80% from Irish roasters and 20% from standout European producers, which means you'll find Cloud Picker, Bell Lane, and 3fe pouring alongside The Coffee Collective, Koppi, and seasonal cameos from smaller European outfits. It's the city's best place to compare what's happening in Irish specialty against the wider continent in one sitting.
The space is compact, busy, and warmly lit, with seating built for staying awhile. Pastries are well chosen. For filter-coffee fans, this is the room to head for.
