The compact Wan Chai café on Morrison Hill Road roasts its own beans and keeps a tight, rotating line-up of single origins — washed Panama, red-honey Costa Rica, hybrid-washed Ethiopia and more — with a second outpost in Tai Kok Tsui.

The pedigree is serious: one of the team is a 2017 World Cup Tasters Champion, and it shows in how dialled-in the cup is. The menu sticks to the essentials done well — espresso, piccolo, flat white and filter — so the beans take centre stage.
