Dawn Kissa is a small kissaten-style café on South Bridge Road that runs on the principle of doing one thing well. The filter programme is the headline: seasonal single-origin coffees served primarily on hand pour-over, with the team taking the time to grind, weigh, and brew each cup in front of you. The format is borrowed openly from the Tokyo and Kyoto kissaten tradition and translates surprisingly cleanly to Chinatown.

The menu is short by design. Expect a rotating board of three to four single origins — washed Ethiopians, Kenyan SL34s, the occasional natural-process Costa Rican — alongside a clean house espresso for those who'd rather not wait for filter. The food side keeps the same disciplined posture: a galette of the week, dark chocolate cookies, nothing that competes with the cup for attention.

The room itself is calm and well-lit, with a handful of bar seats and tight tables. It's the kind of place that rewards the visitor who orders a filter and stays for half an hour. Singapore has more obvious specialty destinations, but few that get the kissaten format this right.
