Born from a former marketer's disdain for poor library coffee, Democratic Coffee, founded by Oliver Oxfeldt, transformed the Copenhagen Main Library's offerings. Oliver famously honed his highly sought-after croissant skills via YouTube, a testament to the café's resourceful spirit. All pastries, including their renowned almond croissants, are baked fresh twice daily in their small in-house kitchen.
The name "Democratic" directly references its unique home within a public library, celebrating it as one of the most accessible and inclusive public spaces, embodying a truly welcoming vibe.Their coffee program is equally distinctive. Utilizing a shared roasting collective, they purchase green coffee in large 700kg pallets, featuring a dynamic rotation of three to four single-origin varieties.
Once a pallet is used, a completely new selection takes its place, ensuring an ever-evolving menu. Democratic Coffee doesn't differentiate between espresso and filter roast profiles; instead, they regularly swap which single-origin bean is used for each brewing method, including manual V60 pour-overs to highlight nuanced flavors. They also source from acclaimed guest roasters like Stockholm's Drop Coffee Roasters, enriching their diverse and ever-changing selection.
