Endorffeine looks more like a science lab than a coffee shop, and that's the point. Tucked into Far East Plaza in Chinatown, the bar is run almost single-handedly by its founder — a former biochemist whose approach to coffee is as technical as the previous career suggests. Different water profiles are used for cold brew and espresso. Sugar and sweeteners are not on the menu. Milk doesn't touch the Ethiopian pour-overs.

The coffee programme is built around what serious specialty drinkers actually want: clean, precise pour-overs sourced for clarity rather than crowd-pleasing sweetness. The espresso line is small but exceptional. Where the bar gets distinctive — and what makes it culturally specific to LA — is the signature menu: coconut macha latte, vanilla pandan cold brew, palm sugar whiskey cold brew. The founder, the son of Thai immigrants, brings the flavours of Bangkok and the techniques of third-wave Berlin into one nine-stool counter.

The space is tiny. There's often a line. Nobody minds — when you sit down, you're getting one of the most considered pour-overs in California.

Open Monday through Thursday only. Plan for a slow visit — Endorffeine doesn't do fast coffee.
