GLITCH Coffee & Roasters opened in 2015 in Jinbocho, Tokyo's historic bookshop district, with a philosophy that's stayed consistent since day one: only single-origin coffees, only light roasts, no blends. Founder Kiyokazu Suzuki built the brand on the idea that the roaster's job is to disappear — to let the bean's character speak as transparently as possible.
The lineup runs deep. There are typically more than ten origins available at any time, with regular features from Ethiopia, Kenya, Colombia, Panama, and Honduras, alongside experimental anaerobic and natural-process lots. All beans are roasted in-house at the Jinbocho location. Service runs both pour-over and espresso, but the filter coffee is where the philosophy lands: bright, tea-like, often floral cups that surprise drinkers expecting traditional Japanese coffee profiles.
The space is small and bright, with a long counter where you can watch the brewing, a few stools, and the working roaster visible through a glass partition. The crowd is a mix of bookshop regulars, specialty pilgrims, and visiting professionals.
GLITCH is now a global specialty reference point. If you only have time for one roaster visit in Tokyo, this is a strong candidate.
