LAB opened on Humboldt 1542 in 2014 and quietly rewrote what specialty coffee meant in Buenos Aires. Founded as a high-quality roasting laboratory — the name is literal — LAB built its reputation around exclusive micro-lots developed for the city's best gastronomic operations, then turned the front of the room into a coffee shop where you could drink the work straight from the source.

The roast philosophy hits the third-wave brief cleanly: light to medium, single-origin-led, tuned to balance acidity, body and sweetness rather than chase a default profile. A separate Palermo Hollywood training centre runs cuppings and barista workshops for the wider scene — LAB has effectively trained a generation of porteño baristas, and you'll find their beans pulled at specialty bars across the city.

Walk in and the room is industrial-minimal, with the roaster visible behind the bar and a small counter for service. Order an espresso, a filter, or a flat white — the staff will pour each with the kind of precision that's normal here and rare elsewhere. If you only have time for one stop in Palermo, this is the one. It's the room that started it, and a decade in, it's still the reference.
