Maru's Los Feliz cafe is one of the most quietly influential spaces in LA specialty. The co-founders are both US Barista Champions, and they've built a coffee programme that treats the cup as a craft object — Japanese minimalism applied to single-origin sourcing and espresso technique.

The menu is short on purpose. A handful of single-origin pour-overs each week, a precisely calibrated espresso programme, and a small list of milk drinks built to let the coffee — not the milk — drive the flavour. The roast profile leans light to medium; the sourcing is direct where it can be. Origin information is on display because the team wants you to know what's in your cup.

The space is the other reason to come. Cream tones, light wood, a counter designed around the brewing process — closer in feeling to a Tokyo kissaten than anything else in LA. There's a constant line out the door on weekends, and the rhythm inside is calm rather than rushed.

Maru also opened an Arts District location, but the Hillhurst Avenue original is still the one to start with. A clear flagship of LA's deep East Asian specialty influence.
