Pangea launched around 2020 with a deliberately big-picture name and an even bigger mission: to redefine what quality coffee means in Istanbul. A few years on, it's one of the new-wave roasters the scene's regulars point to when they argue the city has moved from catching up to leading.
The model is roaster-led. Pangea roasts at its own facility and pours at a Beşiktaş café, building close relationships with a small number of producers rather than chasing volume. Single origins from Ethiopia, Colombia and Costa Rica anchor the menu, with nitro and cold brew rounding it out, and the near-perfect Google rating suggests the focus is paying off.
The room is bright and contemporary, an easy uptown stop between the bigger sights. Order a filter, ask what's freshest off the roaster, and taste why Pangea keeps turning up on shortlists barely five years in.
