Parsa Coffee Roasters opened in Karaköy in 2020 and quickly became the address serious filter drinkers name first. The approach is unapologetically scientific, and the credentials back it up: head roaster and co-founder Parsa Abedini won the 2025 SCA Türkiye Coffee Roasting Championship.

The hand-brew menu is the main event. Beans are offered across three cupping-score tiers — including 90-plus micro-lots — and you choose the brewer to match, from V60, Kalita and Origami to AeroPress, siphon, Clever and Chemex. It's a rare place that treats method as part of the tasting rather than an afterthought, and the baristas are happy to steer you toward the right pairing.

Olive-green walls, worn wooden counters and soft daylight give the room a quiet, almost library-like calm — the kind of space that makes you slow down and actually taste. For the most precise cup on the European side, this is the one.
