Proper Order opened in January 2016 in a corner unit of Smithfield's Distillers Building, and has been one of Dublin's most uncompromising specialty bars ever since. It's run by Niall Wynn — a former Irish Barista Champion — alongside his partner Ali, and the couple's commitment to quality runs through every decision in the room.
The coffee programme is built around Square Mile (London) as the primary roaster, with rotating cameos from world-class producers across Europe. Everything is single-origin where possible. Espresso is dialled tight; filter is the same. Beans are sold on-site for the home brewer, and the curation is as careful as the pour.
In 2020 the team launched No Messin' Bakery — born from wanting pastries as good as the coffee — and that programme now feeds the cafe with morning bakes that match the bar's standard. Smithfield's specialty scene effectively starts here. A pilgrimage spot for anyone serious about Irish coffee craft.
