Raíz Café de Especialidad is run by one of the most respected coffee figures in Argentina. Diego Lobo is co-founder of the Argentine Coffee School and a long-time fixture in the country's specialty community — and Raíz is his own room, in Villa Crespo, where the entire focus is the cup.
The bar layout tells you the philosophy. The whole brewing process is visible from the counter, deliberately — Lobo built the room as a place where every customer can watch the work. There's an outdoor section, a bar facing the brew station, and an upper-level area that looks down on the action. Each level offers a different angle on the same craft.
The menu is intentionally tight. Raíz doesn't try to cover every drink — what's on offer is what Lobo and team have tuned to a precise standard. The food complements without leading: the kitchen runs an entirely vegetarian menu that's there to pair, not distract. The room opens Wednesday through Sunday — the kind of schedule a specialty bar with a community-event identity keeps.
If you want to understand what Argentine specialty coffee looks like at its most disciplined, this is the room. It's not large, and it's not flashy — but the work is real, and you'll learn something every time you order.
