Sonata Tostadores is a small Mexican specialty roaster operating out of CDMX, best known for a tight focus on Oaxacan single origins. The signature lot is Santiago Nuyoo — a high-altitude coffee from the Mixteca region of Oaxaca, often roasted by Sonata to bring out delicate jasmine and orange profiles rare in Mexican coffee.
