Søren & Son opened in 2021 on Dean Street in The Liberties, and it remains one of Dublin's most precise hand-brew rooms. The cafe is built on a partnership with world champions Søren Stiller and Daniel Horbat — meaning the coffee programme is fed by Scandinavian rare-lot work that's hard to find elsewhere in Ireland.

Order a filter and you'll choose between blends like a washed Costa Rica or El Salvador, then between Chemex (lighter, more tea-like) and V60 (more concentrated). On a good day there's a Eugenioides on rotation — a rare coffee species with a flavour profile unlike anything you've drunk before. The team works without syrups, with one-size recipes, and with precise milk control on every drink.

The interior is uber-stylish Skandi: natural light, warm timber, a central communal table, and seating built for sitting still. Fine pastries and vegan cakes round out a tightly-curated programme. For brew-method-driven coffee fans, this is essential.
