The Cupping Room is where Hong Kong's specialty scene grew up. Kapo Chiu opened it in 2011 and went on to win the Hong Kong Barista Championship three times — and to train baristas who would claim the title themselves. The roastery side supplies competition-grade beans across the city, while the cafés pour them on both espresso and hand-brew.

The Sheung Wan flagship on Jervois Street is the heart of it: precise, single-origin-led coffee alongside an all-day kitchen of pasta, sandwiches and pastries, with an upstairs room regulars treat as a second office. It's polished rather than precious — a place that takes the coffee seriously without making you work for it. Come for a championship flat white, stay for the filter flight.
