The Tiong Hoe family has been roasting coffee in Singapore since 1958, but the specialty café you'll visit on Stirling Road only opened in 2014. The continuity matters: this is one of the few specialty operations in the city where you can taste fifty years of accumulated coffee knowledge in a cup.

The menu carries twenty-plus rotating single origins from across the producing world — Yirgacheffes, Geishas, Kenyan AAs, Sumatran lots, Brazilian naturals — alongside the family's signature Missing Ruby blend, an Ethiopian-Brazilian pairing that bridges the operation's old-trade and third-wave halves. Roasts run light enough to show origin, full enough to brew through espresso, batch, and pour-over.

The space is a warm, mostly utilitarian roastery-café in Stirling Road's HDB block, doubling as a barista training academy and retail shop. Locals come for the daily espresso and the bean wall; visitors come for the menu depth. Either way, it's one of the rare Singapore cafés where the staff genuinely have time to talk about the bean in your cup.
