Bovelli sits on Sihlstrasse 20 in the Kreis 1 retail core — a deliberately classy specialty bar with a focused premise. The bean wall is just two roasters, both Swiss specialty heavyweights: Henauer (1896, fourth-generation family roastery) and Stoll (1936, Zurich heritage).

The menu is espresso-only. What sets Bovelli apart is the deliberate split: every drink choice has a classic option (darker espresso roast, traditional pull) and a modern option (lighter roast with fruity character). It's an unusual format for Zurich — instead of a single house style, the bar lets you choose the era of espresso you want, on the same machine, from the same Swiss specialty roasters.

Daytime is coffee; evenings shift to cocktails. The two-roaster discipline keeps the programme tight in a city where multi-roaster bars are increasingly the format — Bovelli's bet is depth over breadth.
