Zurich's specialty coffee scene runs on Swiss precision — and the world's most expensive cup price to match. In a city famous for trains that arrive to the second and watches that don't, the third-wave bars here apply the same discipline to coffee: manual scales on every counter, beans tracked to the roast day, water temperature called out before extraction. The result is one of Europe's most exacting third-wave audiences, concentrated in a handful of walkable rooms where light-roast filter and single-origin sourcing have replaced the Italian café-crème tradition the city was built on.
MAME anchors the modern scene — founded in 2016 by multi-time Swiss Barista Champions and still the benchmark every Zurich guide opens with. Miró Manufaktur de Café took Swiss Roaster of the Year in 2025; COFFEE showcases Swiss-Barista-Champion technique on Grüngasse.
