Few cafés anywhere are as focused as Coyote. Founder Yūsuke Kadokawa spent two years living in El Salvador building relationships with growers, and the shop pours and sells El Salvador coffee exclusively — sourced directly from farms in the ACOPACA producers' association in Chalatenango. The name nods to the middlemen who connect farmers and exporters; Coyote's motto, "between you and producers," reframes that role as a transparent bridge. The Roastery branch, opened in March 2024, is a glass-fronted renovated machiya steps from Demachiyanagi Station, with the roaster working behind the counter. The lineup spans light to dark single origins, including seasonal honey-process and natural Pacamara lots, served as clean hand-drip, drip, or latte — the iced matcha latte has its own following. Prices are refreshingly fair for coffee this traceable. Come to taste one country, done properly.
