KC Roasters by Koinonia makes its philosophy plain: they're coffee roasters first and a café second. Led by Australia-trained Shannon D'Souza, the all-black flagship on Chuim Village Road in Khar is built quite literally around its roaster — a Probat 150 that anchors the room.

The sourcing leans into India's best estates, from the Nilgiris to Chikmagalur, and the brewing gets genuinely experimental: cask-aged lots finished in Amrut whisky barrels, honey-processed pour-overs, and a rotating filter board. The headline act is the siphon bar — the first dedicated one in India — where vacuum-brewed cups arrive clean, bright and a little theatrical. The espresso, meanwhile, has been called the most flavourful in the city.

It's a place for people who want to talk grams and origins as much as drink. Pull up at the counter, ask what's fresh off the roaster, and let the baristas walk you through it.
