If Zurich specialty coffee has a flagship, it's MAME. Founders Emi Fukahori and Mathieu Theis — multi-time Swiss Barista Champions, both consistent World Barista Championship and World Brewers Cup finalists — opened the Seefeld original in 2016. Emi took the World Brewers Cup in 2018; Mathieu has placed third and sixth on the World Barista Championship stage.
MAME means 'beans' in Japanese — a reference to the dedication of Japanese coffee culture, and a directive to never stop improving. In 2020 the brand added its own roastery at Das Provisorium and the operation now spans six locations across Switzerland.
The bar's split is competition-clean: a filter programme for the careful brew (V60, Aeropress, batch), and an espresso programme dialled for milk drinks and the standing-bar tradition Zurich never quite lost. The bag wall rotates with the harvest calendar and the season.
If you only have time for one specialty stop in Zurich, this is the one most baristas in the city will send you to.
