PAGA Microroastery is one of the most uncompromising specialty operations in Bangkok. Founded by Gabriel Carol — twice Romanian National Barista Champion (2017, 2018) and 9th in the World in 2018 — and his fiancée Patricia, PAGA was built around a single editorial decision: no blends, ever. Every coffee on the menu is a named single origin from a specific farm, so each cup tells you exactly where it came from.

The roastery uses a Loring S7 Nighthawk, one of the cleanest-burning specialty roasters on the market — minimal smoke, low emissions, exceptional clarity in the cup. The team rotates rare lots from origins around the world, with regular cuppings open to anyone willing to learn the difference between a washed and natural Ethiopian.

The three-storey space on Sukhumvit 31 is engineered for the journey: ground floor is glass-walled coffee bar; first floor houses the roastery and additional seating; top floor is for green-bean storage and workshops. If you want to understand how single-origin specialty coffee actually works, this is the bar to spend an afternoon at.
