Chad Wang took the World Brewers Cup title in 2017, and VWI is the room where his pour-over philosophy lives. Opened in 2018 in Da'an, the cafe has since grown into a trifecta of shops across Taiwan — but the original Zhongxiao location is still the canonical visit.

The menu is unusually structured. Coffees are split across four tiers — Basic, Select, Unique, and Limited — climbing toward rare lots including Panama Gesha. What sets VWI apart is the water programme: multiple filtration layers, each assigned a specific function (chlorine out, magnesium and calcium calibrated for extraction). Every parameter is engineered toward the same end — the cleanest, most expressive cup of whatever bean you've chosen.

The room itself reads as a lab: deliberate, quiet, focused. This is not a place to bring a laptop or hang out for hours; it's where you sit at the counter, watch a champion's brewing system at work, and treat one cup with the attention it deserves. Worth a stop on any specialty itinerary through Taipei, especially if filter coffee is your priority.
