Libertario is what most third-wave roasteries dream of becoming — a single-farm relationship taken to its logical conclusion. Every coffee on the menu comes from one place: La Palma y El Tucán in Zipacón, Cundinamarca, about an hour and a half outside Bogotá and arguably the most polished competition farm in Colombia. LPET coffees have placed at multiple World Brewers Cups and World Barista Championships.
The Bogotá café is run as the farm's domestic outpost, with the roaster Luisa Quintero — Colombia's first National Roasting Champion (2018) — running the drum. The menu divides into three tiers: Paz, the chocolate-and-caramel house blend; Libre, fruit-forward single-origins; and Rock, an umbrella for the truly exotic — Gesha, anaerobic, barrel-aged, the rare-process work LPET is known for internationally.
The Calle 85 flagship sits on a quiet Chapinero side street and the staff actually know the farm. For anyone interested in what farm-to-cup looks like at the top end, this is the one to visit.
