Bogotá's specialty coffee scene reads like a country quietly reclaiming what it grows. For decades, Colombia's best micro-lots boarded planes for Oslo, Tokyo, and Melbourne while Bogotá itself drank what was left over. Today the script has flipped — light-roast filters, anaerobic ferments, and Pink Bourbon pour-overs land on city menus before they ship overseas, and the air on Chapinero side streets carries the smell of small drums roasting through the morning.
