Varietale takes a step most roasters skip — they buy coffee from Colombian farmers still in parchment, manage the milling themselves, and only then move the green over to the roastery. The extra control means they end up with a stronger relationship with the producer and a tighter handle on what ends up in the cup.

Their Universidad Javeriana–area space is the kind of working roastery where the customer-facing bar is a few steps from the actual drum, and the staff treat the menu as a rotating catalogue of Colombia's growing regions — Tolima this week, Huila next, Nariño the week after. Pour-over, espresso, batch brew, and a rotating filter feature build out the drinks. The room itself is bright and contemporary, popular with the laptop-and-cortado crowd at midday and the I-came-here-for-the-coffee crowd in the morning.

If you want to taste the breadth of Colombian terroir without crossing the country, this is the cafe where the staff have already done the curating.
